How to make the perfect Wiener Apfelstrudel?

Ingredients (serves 4):

  • 500g all-purpose flour
  • 1 pinch of salt
  • 1 egg
  • 1/2 cup of warm water
  • 4 medium-sized apples
  • 100g sugar
  • 1 tsp cinnamon
  • 50g breadcrumbs
  • 100g melted butter
  • Powdered sugar for dusting

Instructions:

  1. Start by making the strudel dough. In a large bowl, mix 500g of all-purpose flour with a pinch of salt.

  2. In another bowl, beat one egg and add it to the flour mixture.

  3. Gradually add 1/2 cup of warm water to the flour mixture, until you have a smooth and elastic dough.

  4. Knead the dough for about 10 minutes on a floured surface. Then, cover the dough and let it rest for 30 minutes.

  5. While the dough is resting, make the apple filling. Peel and core 4 medium-sized apples and cut them into thin slices.

  6. In a large saucepan, cook the apple slices with 100g of sugar and 1 tsp of cinnamon. Cook until the apples are soft and the sugar has melted.

  7. Roll out the strudel dough into a thin sheet on a floured surface.

  8. Sprinkle 50g of breadcrumbs on top of the rolled-out dough.

  9. Place the cooked apples on top of the breadcrumbs, leaving a border of about 2 cm around the edges.

  10. Roll up the strudel dough around the apples, tucking the ends under.

  11. Place the Wiener Apfelstrudel on a baking sheet lined with parchment paper.

  12. Brush the Wiener Apfelstrudel with 100g of melted butter.

  13. Bake the Wiener Apfelstrudel in a preheated oven at 200°C (400°F) for 30-35 minutes, or until golden brown.

  14. Remove the Wiener Apfelstrudel from the oven and let it cool for 5 minutes.

  15. Dust the Wiener Apfelstrudel with powdered sugar and serve warm.
