Ingredients:
- 500g of all-purpose flour
- 10g of active dry yeast
- 5g of sugar
- 5g of salt
- 300ml of warm water
- 20g of baking soda
- Coarse sea salt (for topping)
Instructions:

In a large bowl, mix together the flour, yeast, sugar, and salt.

Slowly add the warm water, stirring until a soft dough forms.

Knead the dough on a floured surface for about 10 minutes, until it becomes smooth and elastic.

Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for about an hour or until doubled in size.

Preheat your oven to 220°C (428°F).

Divide the dough into 8-12 equal pieces, depending on the size you prefer.

Roll each piece of dough into a long, thin rope, about 60cm long.

To form the pretzel shape, take the two ends of the rope and twist them together once, then fold the twisted ends over the center of the rope to form a loop.

Boil the baking soda in a large pot of water for 2-3 minutes.

Place each pretzel into the boiling water for 30 seconds, then remove with a slotted spoon and place onto a lined baking sheet.

Sprinkle the pretzels with coarse sea salt and bake in the preheated oven for 12-15 minutes, or until golden brown.

Allow the pretzels to cool for 5 minutes, then serve warm with mustard or your favorite dipping sauce.
